How about an old Southern Catfish meals? For something really good, such Southern pecan catfish. You know if this is the south, the butter and cream. SOUTHERN pecan catfish

1 cup chopped pecans, divided

1 / 2 cup cornstarch

1 v. Tea salt, divided

1 v. Tea pepper, divided

4 catfish fillets (about 6 grams each)

1 / 2 cup butter, divided

1 / 2 cup heavy whipping cream

V. 2 tablespoon lemon juice

V. 1 tablespoon chopped fresh parsley

In a bow, combine the following ingredients: 1 / 2 cup pecans, cornmeal, 1 / 2 teaspoon salt and 1 / 2 teaspoon pepper. Coat fish fillets with this mixture.

In a large skillet, melt 1 / 4 cup butter over medium-high heat. Bake the fish in the pan until it flakes with a fork. This takes about 6 to 7 minutes on each side. Remove from the stove, but keep warm.

Melt the remaining butter over medium heat in same skillet used to cook the fish. Add the remaining pecans and cook and stir for a minute. Add the cream, lemon juice and remaining salt and pepper. Cook mixture stirring, for about a minute. Stir the fresh parsley and spoon sauce over the fish before serving.

RED POTATO WEDGES

4 medium red potatoes, washed and sliced

1 v. tablespoons extra vierge olive oil

1 1 / 2 c. Tea chopped fresh rosemary (or 1 / 2 teaspoon crushed dried rosemary)

1 / 4 c. Tea garlic powder

1 / 4 c. Tea freshly ground black pepper

Preheat oven to 425 degrees. Place potato wedges in a large bowl. Sprinkle with the remaining ingredients and mix well to coat. Place on baking sheet that has been sprayed with non-stick cooking spray. Cover and cook 20 minutes. Turn potatoes and continue cooking another 20 minutes or until golden.

NOTE: If a diabetic you should not eat potatoes for themselves. They are good with burgers, steaks, chicken, fish, etc., which are rich in protein.

VANILLA POUND CAKE

2 1 / 2 cups reduced-fat baking mix (Bisquick)

1 1 / 2 cup sugar equal Lite

V. 2 tablespoons cornstarch

Light vanilla flavor 1 cup nonfat yogurt

V. 6 tablespoons butter or stick margarine, melted

1 / 4 cup milk 2%

2 eggs

1 v. Tea vanilla extract

1 / 2 c. Tea almond extract

Combine baking mix, sugar and cornstarch equal Lite in a bowl. Mix yogurt, butter, milk, eggs and flavors well blended.

Spoon the mixture well greased Bundt pan. Bake in preheated oven at 350 degrees for 45 to 50 minutes or until a selection of wood inserted in center comes out clean. Cool in pan for 10 minutes. Remove the cake from the pan and let cool completely rack.

Serve with fresh berries.
