Chili Spiced Chicken Meal

For a simple meal can be prepared in about thirty minutes, try this spicy chicken Chile. Add a little crunchy, color and a bit of citrus, add the broccoli with orange cream (A good way to get your children in healthy vegetables). Dessert is elegant, but very easy. French Vanilla cakes berries and fresh mint to make it look as if you really you alone! This meal is ideal for the harried housewife, busy cooking, or the person who does not really want to cook, but want to impress someone. Beginning cooks will find this one-hour meal, they can easily do.


8 skin, boneless chicken breasts

2 v. Tea onion powder

1 v. Tea salt

1 1 / 2 c. Tea peppers

1 / 2 c. Tea chili

Cooking oil spray

Preheat oven to 350 degrees. Combine spices in a small bowl. Sprinkle the herb mixture evenly over chicken breasts. Heat a large nonstick skillet over medium-high heat. Spray skillet with cooking spray. Add chicken to skillet and saute 2 minutes on each side. Remove the chicken in a pan and bake about 15 minutes or until juices run clear.


1 1 / 2 pounds fresh broccoli, cut into flowers

6 grams fat cream cheese, diced

1 / 4 cup fat-free milk

1 / 4 c. Tea Thyme

1 / 4 c. Tea salt

1 / 4 c. Tea orange zest

1 / 4 cup unsweetened orange juice

V. 2 tablespoon chopped nuts

Steam broccoli for 6 to 8 minutes or until clear to tender. Meanwhile, in a small saucepan, combine cream cheese, milk, thyme, salt and orange Zest. Cook on low heat and stir until smooth. Stir in orange juice until combined. Place the broccoli in a bowl, top with orange sauce and sprinkle with walnuts.

Yield 6 servings 3 / 4 cup of each = 126 calories, 14 g carbohydrate, 12 g protein

MINI French vanilla cake with berries and fresh mint

1 can (1.34 grams) Sugar Free French Vanilla Pudding and Pie Mix Fill Ling

1 pkg Graham cracker tarts

Fresh seasonal fruit

Mint sprigs for garnish if desired

Prepare pudding mix as shown in the box. Pour pudding into cakes and cool. Before serving, add 3 or 4 fresh berries and a sprig of mint, if desired, for garnish.

TIP: Keep the remaining chickens in the refrigerator, sealed in a Ziplock bag for use later in the week. PERFECT CHICKEN tacos.
